Having a craving for pasta but don’t want to sabotage your diet? Spaghetti used to be my absolute favorite food before I knew how many carbs and calories were in a small serving. In college I decided I wanted to start eating healthy and pretty much stopped eating pasta then. But GREAT NEWS is I can once again enjoy ‘spaghetti’! Squash that is. It really is delicious. I made up my husbands plate with half spaghetti squash and half the real thing in case he hated it, and he said it was really good! SCORE! Now I won’t have to make us separate dishes when I make this for dinner.
Ingredients1 spaghetti squash 1 Tbsp Olive oil 1Tbsp Oregano 1Tbsp Basil 1 tsp onion powder 1 tsp salt
Cut spaghetti squash in half and place in a large pot with 1-2 inches of water in it. Scrape out seeds with a spoon.
Steam on stove for 20-30 minutes depending on how large the squash is.
Once spaghetti squash is steamed pull out strands with a fork, scraping out the whole inside.
Place squash in a bowl and mix with the rest of the ingredients.
Use your favorite lower sugar tomato sauce on top (My favorite is HERE).
