Mean Green Pancakes (gluten free!)
I’m always trying to find a way to sneak veggies into my toddler. This was an easy way to get her to eat some spinach!
Get your kids (and yourself!) to have a full serving of fruit and vegetables to start the day!
I used 3 bananas, 6 eggs and a handful of spinach to make these. I planned to freeze the extra and use them for future breakfasts, but Roxy ate 5(!), and my husband and I ate several ourselves for breakfast too.
Mix all ingredients together with a blender or hand mixer, then pour on skillet like regular pancakes.
Tip: don’t over mix the batter if using a good processor. Eggs become too foamy. Just mix enough to blend well.
My husband actually said he would eat these instead of his normal from a box just add water mix. All was good until he ruined it by adding Karo syrup. Oh well, at least he’s still getting some fruits, greens and protein in!
