I think if I had to pick one vegetable to live on the rest of my life it would be sweet potatoes! I love my grandmas sweet potato casserole, but I can eat more of this one for a lot less calories and fat!
3 lbs of sweet potatoes, peeled and cut into chunks
1/3 c skim milk (or almond or light soy)
1/4 c egg whites
2 Tablespoons brown sugar
1/2 tsp salt
1 tsp vanilla extract
1/4 tsp cinnamon
1. Place sweet potatoes in large sauce pan or Dutch oven; cover with water. Bring to boil. Reduce heat; cover and cook for 25-30 minutes until tender. Drain.
2. In a large mixing bowl, beat potatoes, milk, egg substitute, brown sugar, salt and vanilla until smooth. Transfer to a 1-1/2 qt baking dish coated with non stick cookig spray. Sprinkle wih cinnamon. Bake uncovered at 350 degrees for 25-30 min or until heated through.
