Yesterday I promised my apple pancake recipe and here it is!
I modeled it from a recipe at www.blogilates.com and just made some slight changes.
We went apple picking Friday in Indiana which was a ton of fun, and came home with apt of apples! I will be making apple recipes a lot in this next month!
So here is the recipe finally:
1/4 cup oatmeal
1 whole egg
3-4 egg whites
1 scoop Vanilla protein powder (I use Isagenix Isapro Vanilla Whey)
half a chopped apple*
1 tsp of cinnamon
1 tsp of vanilla
1 tsp stevia
Put apple and oats in blender first to chop up, then add rest of ingredients. Mix until blended but don’t over mix or batter will be too fluffy and not cook well. *If you want chunks of apple in your pancakes then don’t puree in beginning.
Top with favorite pancake topping. Here I used half a chopped apple and 1 Tbsp of apple butter (not homemade, but that’s on my list to try to make this week). I would have probably mixed Greek yogurt with some apple butter, but I was out of yogurt yesterday.
Nutrition information for entire stack. (Makes 6 small pancakes. Sometimes I eat half a stack and throw the rest in the fridge for a snack later)
