I thought I would start to post my menu each week to help you all plan your meals for the week ahead. I will try to post the list by Friday, that way you can do your grocery shopping and food prepping over the weekend.
Feel free to mix and match to your schedule, but PLAN it! If you leave it to the last minute, you will most likely find yourself in a drive thru or at a take out.
Week of April 28 – May 4
Sunday: We are grilling out at our friend’s house, so no need to plan dinner
Monday: Eggplant Parmesan (I like to do at least one vegetarian dish a week)
Tuesday: Salsa Chicken (This is a late night for me training so I need something quick.)
Wednesday: Taco Night
Thursday: Leftovers (Heating up leftovers makes a quick and easy nutritious meal.)
Friday: Cauliflower Pizza
Saturday: Dinner Out
Snack of the week: almond butter with baby carrots (I will highlight a new snack each week for you to try)
There are links to all of the recipes on here so you can see what you have already in your house, and what you need to make your grocery list. I find that I normally plan 4-5 meals a week and leave one night for leftovers and one night for eating out. Don’t leave healthy eating to chance! Make a plan!
