I have had great success with recipes from The Civilized Caveman on his new app Caveman Feast, so I thought I would try another one. I was looking for something I could use my crock pot for and this sounded perfect. It was simple, flavorful, healthy and budget friendly. The pictures don’t do it justice, because I NEED to get a good camera one of these days.
4-6 boneless, skinless chicken breasts
1 white onion, diced
4 carrots, sliced
3 cloves of garlic
14 ounces diced tomatoes, no salt added
25 ounces organic tomato basil marinara
Handful of fresh basil
1 tbsp oregano
Salt and pepper to taste

Place chicken in the bottom of your crock pot. Add onions, carrots, garlic, diced tomatoes, and any other vegetables you want. Sprinkle with salt and pepper to taste, and place fresh basil on top.
Cover your crock pot and cook on low for 6-8 hours. Serve over a bed of spaghetti squash or with your favorite vegetables. Enjoy!
