Roasted green beans with mushrooms and Parmesan
I took this recipe from Katelyn’s kitchen. It is so good!
1lb green beans
8oz fresh sliced mushrooms
1 1/2 Tbsp Olive oil
1 Tbsp balsamic vinegar
Salt and vinegar to taste
2 Tbsp freshly grated Parmesan cheese
(The recipe doesn’t call for onions, but I threw some in while roasting)
Preheat oven to 420 degrees.
Wash and cut green beans and mushrooms. Place in ziplock bag with vinegar, oil, and salt and pepper. Shake bag around until vegetables are covered. Place on a lined or greased baking sheet and bake for 20-30 minutes, until mushrooms are cooked and green beans get a little crisp. Sprinkle with parmesan cheese.
