I had some leftover pumpkin and I needed to use it before it went bad so I thought pumpkin bread was the way to go! And oh was it delicious! I found this recipe from dandydishes.blogspot.com. I tweaked it just a little but it turned out fabulous!
1 cup of almond butter
1 teaspoon vanilla
½ can pure pumpkin
1/4 cup applesauce
2 tablespoons maple syrup
1 teaspoon baking soda
Add your favorite fall spices! I did 2tsp of cinnamon and 2 tsp pumpkin pie spice.
2 teaspoons fresh lemon juice
½ cup raisins (optional)
Preheat your oven to 325º and butter a loaf pan.
Mix all ingredients together except lemon juice and raisins. Once mixed fold in lemon juice and raisins.
Bake for 45-60 minutes. Check center with toothpick, if toothpick comes out clean bread is finished.
Loaf makes 10 slices
