I made some pumpkin pancakes this weekend and needed to use the rest of the canned pumpkin so I thought I would make a protein cookie! I found this recipe at www.busybuthealthy.com. I tweaked it a little, but used the basic recipe. 2-3 cookies would make a great quick breakfast or snack!
Makes 15 cookies
Ingredients1/2 cup natural peanut butter (or almond butter)
1/2 cup pumpkin puree or canned pumpkin
1/8 cup honey or agave 1 Tbsp stevia 1 tsp pumpkin pie spice 1 tsp cinnamon
1 cup quick oats
3 scoops or 3/4 cup vanilla protein (I used Isagenix Isapro)
1/4 cup semi-sweet chocolate chips
Mix all ingredients together and put in refrigerator to harden for 15-20 minutes. Roll dough out in balls and press into cookies.
I had to use parchment between my hand and the cookie because they were really sticky. I put them in the freezer and once they were hard, put them in a freezer bag for storage.
