I LOVE almond butter. I thought I could start making my own to save some money, but it is not as easy as it sounds. Sure, you just have to grind up almonds, but it takes A LOT of patience. You can check out two of my failed attempts in my recipe failures post.
In this version of my almond butter, I followed all the same steps as in my original almond butter post and then right at the end I aded 2 Tbsp of coconut oil and one Tbsp of maple syrup. I think I could have added one more Tbsp of maple syrup for a little more flavor. The consistency was creamier than my original and the coconut oil added nice healthy fats. Now the challenge is to not eat the whole batch!
