Grilled eggplant is one of my favorite new ways to cook eggplant! It is super easy and absolutely delicious!!!
1. Slice eggplant in 1/4 in slices and spread on cookie sheet. Sweat out the eggplant. Sweating out eggplant makes it much less bitter. All you have to do is sprinkle salt on it after you slice it, and after about 10-15 minutes, press a paper towel into it to get rid of some of the water.
2. Combine a mixture of 1 Tbsp Olive oil, 1 pat of melted butter, chicken or veggie broth, salt and pepper and brush on eggplant.
3. Give eggplant to husband to grill. (This step is for me because as you see below, I tried grilling for the first and last time this week!)
