This gluten free, vegetarian, low fat and low calorie version of the classic pizza is a great way to satisfy that craving for the Friday night meal. This is one that is great and easy for the kids too!
Ingredients 1 eggplant 2 tomatoes 1Tbsp Olive oil 1/2 c natural pizza sauce 1/2 tsp Oregano 1/2 tsp Basil 1/2 c shredded mozzarella 1/4 grated parmesean any other veggie toppings (mushrooms, onions, etc) salt to sweat eggplant
Slice eggplant in 1/4 in slices and spread on cookie sheet. Sweat out the eggplant*, then lightly coat with olive oil, oregano and basil. Then add pizza sauce and slices of tomato. Add any other toppings you desire.
You can make it Paleo if you do not use cheese. I use a small amount of grated parmesan on mine, and I put mozzarella and pepperoni on my husbands. (I would prefer not to use peperoni, as it is a processed meat, but he really wanted it. Since I got him to eat a lot more veggies in this pizza I let a couple peperoni slices slide.)
* Sweating out eggplant makes it much less bitter. All you have to do is sprinkle salt on it after you slice it, and after about 10-15 minutes, press a paper towel into it to get rid of some of the water.
