One of my favorite dishes! Delicious, nutritious, and budget friendly at only $1.19 per serving!* (8 servings)
1.5c of Almond Flour
1 tsp sea salt
2 large eggs
2 Tbsp Olive oil
2 Tbsp grapeseed oil
2 c tomato sauce ( this MAKES the dish!!)
2 c freshly grated mozzarella cheese
¼ c freshly grated parmesan cheese
Preheat Oven to 350 degrees
*Rinse the Eggplant, then Slice is 1/4 in slices lengthwise. Salt and let sweat out and pat dry with paper towel.
*Heat the grape seed and olive oils in a large skillet over medium high heat. Saute the eggplant in the oil for 3 to 5 minutes per side, until golden brown. Transfer the to a paper-towel lined plate.
Bake for 10-15 minutes until the cheese is melted and the edges are bubbling. Remove from the oven and top with parmesan before serving.
*Cost is estimated from what I spend on groceries in Florida at Target, Publix, Aldi and the farmers market.
