For my last pregnancy I had no idea what to expect with my first baby, so I made some freezer dinners in case I wouldn’t have time to cook dinner. I couldn’t imagine not having enough time when I wouldn’t be working for at least 8 weeks, but I am definitely glad that I did it! Now the second time around I have a toddler to chase after as well as a soon to be newborn to tend to. Not having to worry about dinner sounds like a fabulous idea!
Below are the meals that I made for the month after baby girl gets here. Some of them I just cooked while I was making dinner and doubled or tripled the recipe. And some of them I just made when I had a couple hours in the afternoon to cook them. The recipes are located in the links provided.
Taco Chicken x 2
Turkey Meatloaf x 2
Fajita Chicken x 2
Ginger Chicken x 2 (not precooked)
Pork Marsala x2 (I have no idea if this one will turn out after being in the freezer.)
I also made a batch of chocolate peanut butter protein cookies for those times when you need to grab something quick between taking care of a toddler and a newborn. This will hopefully prevent me from snatching things from the pantry.
So there are 16 dinners all prepped and ready to go! Most of them you just have to heat up and serve! You can take a week to cook double and triple what you are already making for dinner, or just take a day or two and punch out all the meals at once. I took the week approach this time, and it worked great!
I don’t know know why I don’t double recipes every time I cook! I am going to make a point to do it more often.
