I bring this salsa to almost EVERY get together that I go to. My friends are expecting it from me anymore. I usually bring it with carrot chips and celery instead of tortilla chips because I know someone will bring those anyway and I want to bring the most veggies possible. This recipe was taken from my friend Alyssa with love. It is better even the second day, so it’s awesome to make the day before a party!
½ red onion (diced small)
2 Tbsp olive oil
1 Tbsp salt
1 can of shoepeg corn
2-3 fresh tomatoes (diced small)
2-4 Tbsp red wine vinegar
4 Tbsp lime juice
1 Tsp black pepper
2 Tbsp fresh cilantro (chopped)
Mix all ingredients well!
